Ingredients

The Steak & Marinade

  • ✓ 1.25 lbs Top Sirloin Steak, cut into 1-inch cubes
  • ✓ 1 tbsp Extra-Virgin Olive Oil
  • ✓ ½ tsp Garlic Powder & ½ tsp Onion Powder
  • ✓ ½ tsp Kosher Salt & ½ tsp Freshly Cracked Black Pepper

Garlic Butter & Roasted Asparagus

  • ✓ 1 lb Fresh Asparagus, woody ends trimmed
  • ✓ 2 tbsp Unsalted Butter
  • ✓ 4 cloves Garlic, finely minced
  • ✓ 1 tbsp Fresh Parsley & Fresh Lemon Juice for garnish

Instructions

  1. 1 Roast Asparagus: Preheat oven to 400°F (200°C). Place trimmed asparagus on a baking sheet, drizzle with 1 tbsp olive oil, season with 1/2 tsp salt, and roast for 12-15 minutes until tender-crisp.
  2. 2 Prep Steak: Pat steak cubes thoroughly dry using paper towels. In a bowl, toss steak with 1 tbsp olive oil, garlic powder, onion powder, 1/2 tsp salt, and black pepper.
  3. 3 Sear Steak Bites: Heat a heavy cast-iron skillet over high heat until smoking hot. Add steak bites in a single layer without overcrowding. Cook undisturbed for 2 minutes to form a crust, then flip and cook for 2 minutes more.
  4. 4 Baste & Finish: Reduce heat to low. Add butter and minced garlic to the skillet. Stir constantly for 1 minute as the butter foams, coating all steak bites thoroughly.
  5. 5 Serve: Plate roasted asparagus alongside the steak bites. Drizzle pan juices over top and finish with fresh parsley and a squeeze of fresh lemon juice.
