Ingredients You'll Need

  • ✔ 4 wild-caught salmon fillets (6 oz each, skin-on)
  • ✔ 1 lb fresh asparagus, trimmed
  • ✔ 1 lb baby red potatoes, halved
  • ✔ 3 tbsp extra virgin olive oil
  • ✔ 2 cloves garlic, minced
  • ✔ 1 fresh lemon (juiced & sliced)
  • ✔ 1 tbsp fresh dill or parsley, chopped
  • ✔ Sea salt and freshly cracked black pepper to taste

Step-by-Step Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Roast Potatoes First: Toss halved baby potatoes with 1 tbsp olive oil, salt, and pepper. Spread on the baking sheet and roast for 10 minutes to give them a head start.
  3. Add Salmon & Veggies: Remove the sheet pan from the oven. Arrange salmon fillets and trimmed asparagus alongside the potatoes.
  4. Season Everything: Drizzle remaining olive oil and lemon juice over the salmon and asparagus. Sprinkle minced garlic, fresh dill, salt, and pepper evenly. Top salmon with lemon slices.
  5. Bake to Perfection: Return to the oven and bake for 12-15 minutes, or until the salmon flakes easily with a fork and potatoes are tender.
